Turnover is the second constraint. Many properties replace a large share of line staff every year, so training has to be fast, repeatable and delivered by the supervisor rather than a visiting trainer. Water systems, kitchen temperature control, fire escape routes and chemical handling need the same instruction whether the person started last year or last week. On the cost side, energy and water are usually the fastest wins in a building running twenty four hours, and food waste measurement changes purchasing decisions in the kitchen within weeks. Claims and complaints reduce as well. A guest illness allegation or a slip in a wet area is far cheaper to resolve when cleaning records, training records and maintenance logs are complete and dated.
