Turnover is the second constraint. Many properties replace a large share of line staff every year, so training has to be fast, repeatable and delivered by the supervisor rather than a visiting trainer. Water systems, kitchen temperature control, fire escape routes and chemical handling need the same instruction whether the person started last year or last week.
